Football season is nearly upon us, and I am well-prepared with my copy of the Cougar Football Cookbook.
Holly Mendenhall, the wife of Brigham Young Univerity (BYU) head football coach Bronco Mendenhall, compiles favorite recipes from coaches, players and their wives from 1964 to 2012. The cookbook has an easy to access and engaging football-themed format. She starts with Pre-Game Warm-Ups (breakfast) and Rise and Shout (tailgate appetizers) and continues through First Downs (salads), Bowls (soups), Touchdown! (entrees), Cheers from the Sidelines (sides), Point After (desserts) and finally Water Break (beverages).
The day I received the cookbook, my 16-year-old daughter immediately tried out the recipe for Sugar Cookies. The instructions were easy to follow, and the results were delicious. They were light and soft, the way that I like them. If you wanted crunchy sugar cookies, I think you could roll them thinner for desired results. I believe the surprise ingredient, sour cream, made them stand out above other sugar cookie recipes.
Other recipes I am looking forward to trying are the Gruyère Crostini, Wild Rice Salad with Artichoke Hearts, Slow-Cooked Turkey Spinach Lasagna and McKenzie’s Coconut Rolls, among many others.
One hundred per cent of the proceeds from the cookbook go to benefit Thursday’s Heroes. Thursday’s Heroes are children and families who are inspiring examples of courage and strength in facing adversity. Through the Thursday’s Heroes program, heroes receive gifts and autographed BYU Cougar memorabilia and an invitation to watch the Thursday football practice, tour the Cougars’ sports facilities and meet the team.
